Working in the Grove

First we beat the branches of the olive tree so that the olives will fall to the netting spread below the tree. My 90 year-old grandfather supervises the work, giving advice and directions where necessary. |

Once the branch beating is finished, we begin gathering up the netting with the captured olives. |

The gathered olives are put into sacks for transportation to the refinery. |

We transport the olives to the refinery by tractor... |

At the refinery we unload the olive sacks in preparation for the pressing process. |

A day's worth of olives wait to be pressed in order to extract their oil. |

The olives are dumped onto the conveyor which takes them through the wash and on to the press. |

Once through the wash, the olives are carried directly into the press. |

The final product! Fresh-pressed olive oil pouring directly out of the press.
