    Several scientific studies outline the beneficial effects of consuming balsamic vinegar.

    One study found that balsamic vinegar had stronger radical scavenging abilities and higher polyphenol concentrations than rice vinegar.

    Another study found that balsamic vinegar may help lower blood sugar levels when eaten as part of a meal, supporting its role as an antiglycemic agent.

    Another study suggests that balsamic vinegar may have positive effects on the biochemical risk factors of atherosclerosis, which is the  disease of the arteries characterized by the deposit of plaques of fatty material on their inner walls. 

    Mousto Balsamic  Acropolis Organics is a product of mild acidity (2.6) and a high concentration of sugars(grapes) and grape tannins (57 brix). Otherwise we can say that while generic  balsamic brands usually have a high moisture content (water) 74% , Acropolis Organics Mousto Balsamic only 43% water for a very rich concentration of nutritional values  and a deliciously addictive taste.

    Acropolis Organics Balsamic Glazes are syrupy reductions naturally sweetened and suitable for a wide variety of dishes.

    Just like our balsamic vinegars, they are made with a traditional family recipe for grape must, and aged in oak  barrels for at least 6 years.

    Unlike common recipes for balsamic glazes, which are sweetened with refined sugar, our balsamic glazes are flavored with certified organic fruits that boost the nutritional value of our products.

    Authentic balsamic vinegar has already fermented for several years. It will continue to stay safe for consumption indefinitely. Like aged wine, balsamic vinegar gets better with time.

    To preserve the precious flavors, tightly seal the bottle after each use. Store it in a cool, dark cabinet. There is no need to refrigerate unless you would like to chill it for use over crispy salads and vegetables.

    Balsamic Vinegar is a fermented grape must.  After harvesting of the grapes, they are pressed into grape must so that fresh juice is complete with juice, skin, seeds, and stems.  The grape must is then further reduced over an open flame and fermented and aged, according to artisanal family traditions.

     

    Acetic acid is the main compound of balsamic vinegar. Research shows it contains strains of probiotic bacteria, which may improve gut health and strengthen immunity.

    Balsamic vinegars with a list of hard to pronounce additives are commonly found on the supermarket shelves. GMO brown sugar, thickeners, and caramel coloring are possible hidden additions.

     

    Similar to the dishonest practices that have been found to take place in the olive oil industry, with olive oil being diluted with cheaper seed oils or canola oil, industrialized balsamic may be watered down with cheap wine vinegar, adulterated with thickeners, and/or artificially enhanced with chemicals to add flavor and colour.

     

    Be sure to read the label carefully, and verify that the brand of balsamic vinegar you buy contains grape must as the only ingredient—as found in Acropolis Organics Vinegars and Glazes.
